If you ask me, those who undertake to grow an actual human inside of their bodies, not to mention forgoing sushi, wine, soft cheese, and did I mention sushi?, for nine months, deserve to be rewarded in the most decadent way possible. And believe me, this coconut, lime and white chocolate milkshake is decadent in all the right ways.
It has all your standard perfect-beverage bases covered: flavor (sweet, but not terribly so, accentuated by bright lime and tropical coconut), texture (smooth as silk, but with the occasional chewy chunk of chocolate if you prefer), temperature (cool and refreshing), and thickness (barely able to get it through the straw, exactly as a good shake should be).
This drink was inspired by the flavor preferences of our guest of honor today: my friend Zainab is having a baby boy! Zainab is both an exceptional baker and a ridiculously smart neuroscientist. How lucky is this kid to be raised by such an amazing woman? A huge group of bloggers and I are so excited to be able to come together to honor Zainab, her husband and their son-to-be!
Oh, and in case you haven’t figured it out yet, the theme of this shower is tropical recipes, and specifically, coconut! Which brings me to this milkshake, which consists of approximately 147% coconut. The base is coconut milk and coconut cream, so you know you’re in good hands. It’s frozen, and then blended until creamy with white chocolate chips, sweetener, lime juice and lime zest*, which subtly bedazzles the milkshake with bright green flecks. Just pour and serve, garnished with a lime wedge and maybe a little flaked coconut on top, and that’s it!
*and for the non-pregnant among us, you can also opt to add rum, though this drink is great on its own!
Well, actually, that doesn’t have to be it. The best part of about this recipe is that it is so easily adapted into ice cream if you want it to be – because I hear that being pregnant in the summer SUCKS and you’re blazing hot all the time.
It couldn’t be easier, and while the texture is going to be better if you use an ice cream machine, you can even make it no-churn style if necessary. Just follow the instructions on your ice cream maker instead of freezing the batter into ice cubes and then blending.

Coconut, Lime and White Chocolate Milkshake
gluten free, vegan, and paleo-friendly
Ingredients
- 2 small cans coconut cream, 5.4 ounce
- 1 can full fat coconut milk, 13.6 ounce
- 1/4 teaspoon salt
- 1 cup unsweetened almond milk, or other milk of choice
- 1/4 cup lime zest
- 1/2 cup fresh lime juice
- 1 cup white chocolate chips + more for garnish, optional
- 1/4 cup shredded coconut for garnish, optional
- Lime wedges for garnish, optional
Instructions
- Stir or blend together the coconut cream, coconut milk and salt.
- Freeze in small portions (such as an ice cube tray) or in a baking pan (so you can break it up before blending) for a couple of hours until mixture begins to firm up, but is not frozen solid.
- Transfer semi-frozen coconut base to a high speed blender, and add remaining ingredients, except for the white chocolate, shredded coconut and lime wedges that you set aside for garnish.
- Blend until it reaches your desired consistency - you may want to leave the chocolate chips a little bit chunky for some added texture, or continue to blend until it's completely smooth.
- Pour into glasses, garnish and serve immediately.
Notes
I used 2x5.4 ounce cans, but if you can only get a 13-ounce can, use that instead.
You can also add a few shots of rum to the blender with the other ingredients, if you wish.
Yield: about 6-8 small milkshakes. This is very rich, so a little bit goes a long way, and this recipe makes enough for a (small) crowd. If you're just making it for 1-2 people, you may want to make a half recipe.
