Since we’re all friends here, I’m going to be honest: Sometimes I don’t think about dinner until about 7:30pm, when we – two busy and exhausted people with a tiny, but extremely reliable (and adorable) alarm clock in the next room – should be starting to clean up and head to bed, not just starting dinner.
I’ll save you the normal diatribe about how life is busy and all that and cut to the chase: I don’t know where I’d be without my slow cooker.
No. Hungry, definitely.
You know all those freezer meals they tell you to prep for the first few weeks of life with a baby? Sure, those meals were handy, but I really wish I still had a freezer stocked with MREs (<— Stands for “meals ready to eat”/do not google it unless you want to go down a deep, deep rabbit hole populated by doomsday preppers, which is exactly what it sounds like) right now, when life is expected to be back to normal, but with a baby who still wakes up at least once during the night and refuses to take a proper nap (proper being defined as any duration of time that does not require me to decide whether to shower *or* eat), is anything but.
And so, like a knight in shining stainless steel armor, my slow cooker comes to the rescue again and again and again. While I know that many people swear by the Instant Pot for last minute dinners, once you get in the habit of throwing a bunch of stuff in the slow cooker while you’re eating breakfast or lunch, it is actually easier, in my opinion, to not have to worry about dinner at all at the end of the day.
